Peppermint Mocha Bites

I'm a big fan of peppermint + chocolate during the holidays. Are you? I'll take a peppermint mocha over an eggnog latte or pumpkin spice latte any day. I usually treat myself to 1 or 2 during the holidays, but I also try to find lower sugar alternatives to satisfy my craving.


Lately' I've been loving these peppermint mocha bites when I'm craving something chocolatey and sweet! You can make them quickly since they don't require any baking. I like them in the afternoon when my sweet tooth hits. They are gluten free, vegan- and delicious.





Peppermint Mocha Bites


-1 scoop Peppermint Mocha Shakeology* (see notes)

-1/3 cup cashew or almond butter**

-1/4 cup maple syrup

-1/2 tsp peppermint extract

-1/3 cup coconut flour

-1/3 cup almond flour

-sprinkle of sea salt

-1/4 cup chocolate chips

-1/4 cup cacao nibs


Mix all ingredients until well combined and smooth. If the mixture is too dry you can use a little bit of melted coconut oil. Next, roll into 10-12 balls. I like to use a cookie scoop to make this easy. Place in an airtight container and refrigerate.


A few notes:


*I love Shakeology for the nutrition it provides and the peppermint mocha flavor is the BEST! However, you can use any plant based chocolate or vanilla protein powder that you have.

**I don't recommend using peanut butter here. The flavor will overpower the peppermint.

Coconut flour soaks up a lot of moisture, so be careful with measuring.
